Wheat Recipes

Using Your Wheat

You may have some wheat stored and need some ideas on what to do with it. Here are several recipes for you to try. See what you and your family like. Make up your own recipes.

Wheat Baking Mix

  • 9 c. whole wheat flour
  • 1 1/2 c. instant dry milk
  • 4 tsp. salt
  • ½ cup sugar
  • 1/3 cup baking powder
Stir together. Store in covered container. Mix can be made using a variety of whole grain flours; I use 1/3 red wheat, 1/3 white wheat, and 1/3 oat.
If you do not have oat groats, you can make oat flour by putting oatmeal into a blender)

Biscuits:

Cut in ¼ c. butter, shortening, or oil into 2 c. Mix.
Stir in 2/3 c. milk or water.
Lightly flour a board with biscuit
Mix and turn all the mixture onto it.
Knead to a ball and roll out to ½”.
Cut with a knife or a cutter dipped in flour.
Place 2” apart on a greased baking sheet.
Bake at 425 for 10-12 minutes. Makes 12 biscuits.
Use biscuit dough as a topping for a meat pie or a crust for a pan pizza.

Pancakes

  • 2 c. Mix
  • 1 egg or 1 T. dried egg plus 2 T. water
  • 6 T. oil
  • 1 ½ - 2 c. water
Whisk together dry ingredients. Add liquids and stir just until combined (will have small lumps).
Cook on hot, oiled griddle. Makes 12-6 inch pancakes.
For variety: add cinnamon, fruit, nuts, Chocolate Chips, etc.

Muffins

  • 3 ½ c. Mix
  • 1 egg
  • ½ c. sugar
  • 1 ½ c. water
  • 2/3 c. oil
Whisk together dry ingredients in a bowl. Add water and oil, stir just until ingredients are moistened.
Spoon batter into greased muffin pans. Bake at 400º for 15 minutes until lightly golden brown. Makes 12 muffins.
Oatmeal Muffins: Decrease Mix to 2 ¾ c. Add 1 c. quick quick oats and increase water to 1 2/3 c.
Chocolate Chip: add 1 c. Chocolate Chips, 1 t. cinnamon, ½ t. cloves

Cooking Whole Kernel Wheat (Wheat Berries)

Wash one cup of wheat and soak in 2 cups cool water for 12 hours.
Place rehydrated wheat in a pan and bring to a boil. It may be necessary to add water.
Simmer for about one hour until tender.
Wheat need not be covered with water since cooking by steam is effective (use a lid).
Water should be mostly absorbed after the hour.
The plump, cooked wheat will keep in a covered container in the refrigerator for about two weeks or frozen for longer. So, make lots and save time!

Pressure Cooker Method:

1 cup wheat to 2 cups water at 15 lb. pressure for 15 minutes.

Crock Pot method

  • 1 cup wheat berries
  • 3 cups water
Put in crock pot on low all day or overnight (8-12 hours)

Thermos wheat cereal

  • 2 cups water
  • 1 cup whole wheat berries
Bring water to boil in saucepan. Pour about ½ cup boiling water into thermos.
Cover and set aside. In strainer wash wheat berries under running water.
Pour hot water out of thermos. Spoon washed wheat into hot thermos. Add remaining boiling water to thermos.
Cover and let sit 6 hours or overnight. Makes about 2 cups.
Ideas for using wheat berries:
  • Add with your cooked ground beef to extend the beef.
  • Add to chili, stew, vegetable soups.
  • Stir wheat berries into your tuna salad with diced celery and chopped onions for a sandwich filling.
  • Even though wheat berries are a little chewier than rice, you can substitute wheat berries for rice.

Bulgur Wheat

Bulgur is a precooked, dried cracked wheat. It is toasted in appearance, nutty in flavor, and easily adaptable to favorite dishes. Bulgur has the advantage of cooking more rapidly than whole or cracked wheat. People in the Middle East eat this daily.
Wash wheat kernels in cool water and discard water. Place wheat in a medium saucepan, add enough water to cover wheat. Bring to a boil. Turn off heat and let it rest 1-2 hrs. Drain excess water and spread wheat thinly on a cookie sheet or shallow pan and dry in oven at 200 degrees until very dry. When thoroughly dry, remove the chaff by rubbing kernels between the hands. (You may need to slightly moisten hands.) Crack wheat in a mill, grinder or blender. It is now ready to use. You can store this in airtight container on your shelf. If the recipe calls for cooked bulgur, boil it in water for 5-10 minutes or until rehydrated. It will approximately double in volume.

Cracked Wheat

  • 1 cup cracked wheat
  • 2 cups water
In a 1 ½ qt pan put cracked wheat and water. Bring to boil, lower heat and simmer, covered for 20 minutes. Makes about 3 cups.

Grape Nuts

  • 6 cups whole wheat flour
  • 1 ½ cups brown sugar
  • 1 tsp salt
  • 2 cups buttermilk
  • 1 tsp baking soda

Or

Grape Nuts 2nd Variation

  • 2 ½ c. whole wheat flour
  • ½ tsp. salts
  • ½ c. white bean flour
  • ¼ tsp. ginger and cinnamon
  • ½ c. dry milk powder
  • ¼ cup warm honey
  • ½ c. brown sugar
  • 2 tsp. vanilla extract
  • 6 Tbsp. water
Mix dry ingredients. While mixing, drizzle in wet ingredients; only enough water to make a fine, crumbly mixture. NO NOT MAKE A DOUGH. Should resemble grape nuts. Spread evenly on a large baking sheet and bake at 325 for 10 minutes. Stir to break up granules and bake 5-10 minutes longer, or until golden brown. Allow to cool and serve with milk or store in air-tight container.

Home made cold cereal

  • 3 cups milk
  • 2 T honey
  • 4 cups wheat flour OR 3 cups wheat flour and 1 cup quick oats
  • 1 tsp baking soda
  • 1 cup (not packed) brown sugar
  • 1 tsp salt
Mix milk and honey together.
Add wheat flour, soda, brown sugar and salt, mix thoroughly.
Beat until smooth. Spread on 1/8 - 1/4 in thick on 2 or 3 greased cookie sheets.
Bake 350 degrees for 35-40 minutes or until golden crisp.
Remove edges if cereal starts to brown too much.
Cool completely. Break into flakes.
Store in air tight container. Makes up to 6 cups cereal.

Blender Pancakes

  • 1 c milk
  • 2 eggs
  • 2 tbsp oil
  • 1 c uncooked whole wheat
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp honey or sugar
Put milk and wheat in blender. Blend on highest speed for 4 to 5 minutes or until batter is smooth.
Add and blend on low, eggs, oil, baking powder, honey, and salt.
Bake on hot griddle.
By adding one additional tbsp. wheat and increasing oil to 4 tbsp., you have waffle batter.

Blender Wheat Waffles

(3-4 servings)
  • 1 Cup Milk (3 T. Powdered Milk and 1 C. Water)
  • 1 Cup + 1 Tbs Wheat Kernels, whole & uncooked
  • 2 Eggs (2 T. Powdered Eggs and 1/4 C. Water)
  • 2 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1/4 Cup Oil
  • 2 Tbs. Sugar
Put milk and wheat kernels in blender. Blend on highest speed for 4 or 5 minutes or until batter is smooth.
Add eggs, oil, baking powder, salt and honey or sugar to above batter.
Blend on low.
Pour batter into hot prepared waffle iron from the actual blender jar (only one thing to wash!)
Cook: They will take slightly longer to cook than regular waffles--keep checking.

Variation: Banana Nut Waffles

Increase wheat to 1 Cup + 2 Tbs (that is an extra 1 Tbs of wheat added to above recipe)
Blend two ripe bananas into batter before pouring into the waffle iron.
Sprinkle chopped walnuts (if desired) over top of batter before closing the waffle iron.
Prepare and Cook as directed above.

Snickerdoodles

  • 1 cup butter
  • 1 ½ cup sugar
  • 2 teaspoons cream of tarter
  • 1 teaspoon baking soda
  • 2 eggs
  • 1/2 teaspoon salt
  • 2 1/2 -3 cups Wheat flour
Cream butter and sugar.
Mix in cream of tartar, baking soda, and salt.
Add eggs and mix.
Mix in enough flour to make a dough that would make a soft dough that will keep its shape.
Roll into 1 inch diameter balls.

Roll balls into a mixture of:
  • 3 tablespoons sugar
  • 2 teaspoons cinnamon
Bake in 400 oven for 8-10 minutes on an ungreased cookie sheet.
Makes 3- 4 dozen cookies.

Wheat Sausage

  • 1 cup cooked whole wheat, ground
  • 1/2 tsp dried marjoram
  • 1/2 tsp rubbed sage
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 1 tsp brown sugar
  • 1 dash cayenne pepper
  • 1/8 tsp liquid smoke
  • 1 tsp beef bouillon granules
  • 1 tsp Worcestershire sauce
Combine all ingredients. Form into 4 patties.
Cook over medium heat in 1 tablespoon vegetable oil. Fry until crisp; turn and cook second side until crisp.

Sausage from Cracked Wheat

Wheat Meat
  • 3 c water boiling
  • 1T bouillon
  • 1 C cracked wheat
Cook on low until water is all absorbed and wheat is very soft, about 45 minutes. Makes 3 cups.

Sausage seasoning

  • 3T ground Rosemary
  • 7T ground sage
  • 2T salt
  • 3T butter powder
  • 3 1/2T powdered basil
  • 2T cayenne pepper
  • 1tsp pepper
  • 2T garlic powder
Mix together and keep in dry container
Sausage
  • 3 C beef wheat meat
  • 3T Flour
  • 3 eggs (or reconstituted powdered eggs)
  • 2tsp sausage mix

Tuna and cracked wheat salad

  • 2 cups cooked cracked wheat
  • 12 oz tuna, drained and flaked
  • ½ cup mayonnaise
  • ¼ cup sliced green onions
  • ¾ cup diced celery
  • ¼ cup sliced olives (optional)
  • 1 tsp lemon juice
Place all ingredients into medium sized bowl and toss together. Best when chilled overnight.
Serve on lettuce or in a sandwich. Makes 4-6 servings

Wheatberry Pineapple Chicken Salad

  • 1 can crushed pineapple, drained lightly
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1 can chicken, drained and flaked
  • 1/2 cup slivered almonds
  • 1 cup cooked whole wheat
Mix together the pineapple, mayonnaise, and salt. Add chicken, almonds and wheat. Stir well.
Chill several hours before serving. Serves 4.

Peachy Chicken Oriental Salad

  • 4 cups sliced peaches, Drain and reserve liquid
  • 1 cup diced celery
  • 2 cups cooked wheat berries
  • 2 cups cooked chicken diced
  • ¾ cup mayonnaise
  • 1 T lemon juice
  • ¼ cup peach juice
  • 1 tsp honey
  • 1 can Chow mien noodles
Combine all ingredients except the noodles.
Just before serving, toss with noodles.
Serve immediately. Serves 6-8

Quick Pioneer Stew

  • 2 cans kidney beans- drained or 4 cups cooked
  • 2 cups water
  • 2 tsps. Beef bouillon
  • 1 tsp salt
  • ½ to 1 pound beef, browned
  • ½ cup chopped onion
  • ½ cup finely diced green pepper
  • 1 can whole kernel corn, undrained
  • 1 can diced tomatoes, undrained
  • ½ tsp. Chili powder
  • ¾ tsp. Salt
  • ½ to cup shredded mild cheddar cheese
  • 2-3 cups cooked wheat berries
  • 1 Tbsp. Flour
In skillet cook ground beef, chopped onion, green pepper until meat is browned.
Drain off fat.
Add meat mixture to corn, tomatoes, beans, and wheat berries.
Add chili powder and salt to taste.
Simmer 20m minutes.
Combine 1 Tbsp. Flour with 2 Tbsp. cold water, stir into stew.
Cook and stir until thickened and bubbly.
Add cheese to the top just before serving. Serves 8

Boston Baked Wheat

  • 4 cups cooked wheat berries
  • ½ cup mild molasses
  • 1 cup ketchup
  • ¾ tsp prepared mustard
  • 1 onion, chopped, sautéed
  • 3 slices bacon, cut up, fried
  • Salt and Pepper to taste
Combine in casserole dish. Bake 30 minutes at 350 degrees.

Mandarin Oranges and Wheat Salad

  • 1 cup bulgur wheat
  • 2 cups water
  • 1 11 oz can of mandarin oranges, drained
  • 1/3 cup mayonnaise
  • 2 T orange juice
  • 2 T lemon juice
  • 1 T chopped chives
  • 1 tsp sugar
  • 1 ¾ tsp salt
Combine wheat and water in pan.
Bring to a boil, reduce heat, cover and simmer until all the liquid is absorbed. (about 15 minutes)
Let cool. Add oranges to cooled bulgur.
Chill for at least 1 hour.
Combine remaining ingredients and mix well.
Pour over chilled wheat and oranges and toss gently.
4-6 servings

Fiesta Wheat And Bean Salad

  • 1 orange or red pepper, diced
  • 1 green pepper, diced
  • 1 small red onion, diced
  • 1 bunch cilantro, chopped
  • 1 small jalapeno pepper, cored and diced
  • juice of 1 lime
  • 3 c. cooked wheat berries
  • 1 can corn, drained
  • 1 can black beans, drained
  • 2 tsp. chili powder
  • 2 tsp. ground cumin
  • 1/4 c. cider vinegar
  • 1 T. sugar
  • 1/2 c. vegetable oil
  • 1 tsp. salt
Combine all ingredients in a bowl and toss well. Chill for at least 1 hour before serving.

Peanut Butter Cookies

  • 1/2 cup butter, softened
  • 1/2 cup butter flavored shortening
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1 egg
  • 1 cup peanut butter
  • 1 teaspoon vanilla
  • 2 1/2 cups whole grain flour
  • 2 teaspoon2 baking soda
  • 1/2 teaspoon salt
Cream the butter, butter flavored shortening, and sugars.
Add eggs and blend.
Add peanut butter and vanilla.
Add dry ingredients and stir until well blended.
With about a Tablespoon of dough, roll into a ball. Place 3 inches apart on lightly greased cookie sheets.
Make criss-cross pattern with fork. Bake in a pre-heated oven at 375 degrees 8-10 minutes until set, but not hard.
Do not over-bake.
Leave on sheets for 2 minutes before removing.
Cool, and store in covered container.

Chocolate Chip Cookies

cream together:
  • 1 lb real butter
  • 1 1/2 C. sugar
  • 2 C. dark brown sugar
beat in
  • 2 t. vanilla
  • 3 eggs
add:
  • 1 1/2 t. soda
  • 1 1/2 t. salt
  • 6 cups whole grain flour
add any of the following:
  • 1 1/2 cup oatmeal
  • 1 1/2 cup raisins
  • 2 + cups of chocolate chips (variety if desired)
  • 2 cups chopped nuts
  • 1/2 cup flaked coconut
bake at 350 for 8-11 minutes makes 4-5 dozen

Mexican Wedding Cakes

(Snowball Cookies)
  • 1 cup butter, softened
  • 3/4 cup powdered sugar
  • 2 cups whole grain flour
  • 1-2 cups chopped walnuts, pecans or almonds
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • Extra powdered sugar to roll cookies in
Preheat oven to 350 degrees
Mix all the ingredients together
Roll dough into 1" balls
Put on ungreased cookie sheet
Bake for 12-18 minutes, until set but not brown Immediately remove from cookie sheet and roll in powdered sugar.
Cool completely then roll in again in powdered sugar

Shortbread

  • 1 cup white sugar
  • 1 pound butter softened
  • 4 cups flour
  • 1/4 teaspoon salt (opt)
Cream butter and sugar with a wooden spoon. Add flour and salt and knead dough with your hands.
Press dough into an ungreased 9 x 13-inch baking pan.
Spread it flat right into the corners. Prick with fork about at 1 inch intervals.
Bake at 275F for one hour or until pale golden.
Cut while hot into diamonds or rectangle shapes. A pizza cutter works well. Let cool.
Or cut into small shapes and separate or use very small cookie cutters and bake on a cookie sheet.

Whole Wheat Chocolate Chip Bars

  • 1/2 Cup Butter
  • 1 Cup Oil
  • 2 Cups Brown Sugar
  • 4 Eggs
  • 1 Tsp. Vanilla
  • 1 Tsp. Salt optional
  • 2 Cups Whole Wheat flour
  • 2 Cups Quick Oats
  • 1 Cup Chopped Nuts
  • 1 Cup Chocolate Chips or Raisins
Mix in order listed. Cream Butter, Oil, Sugar and Eggs First.
Mix all ingredients well.
Bake in greased 9 x 13 cake pan at 350 degrees for 30 minutes.

Bean and Wheat Brownies

  • 1/2 cup cocoa
  • 1 1/2 cups whole wheat flour
  • 1/2 tsp salt*
  • 1/2 tsp baking soda
  • 1 1/2 cups sugar
  • 1 - 15 oz can black beans
  • 2 tsp vanilla
  • 1/3-1/2 cup water
Rinse canned beans and puree in blender with water and vanilla.
Pour into mixing bowl and add dry ingredients. Mix until smooth. Pour into 9x9 lightly greased pan.
Bake 345 degrees for 20-25 minutes.

English Muffins

  • 1 1/3 c. warm water
  • 2 T. yeast
  • 2 T. honey
  • 1 ½ t. salt
  • 1/3 c. oil
  • 3-4 c. wheat flour
  • Cornmeal
  • 2 eggs (or 2T. egg powder and 5 T. water)
Soften yeast inn warm water and honey. Add the rest of the ingredients and thoroughly mix together.
Roll out on a lightly floured surface to 1/2” thickness.
Cut with a biscuit cutter.
Dip dough in cornmeal, and bake on a griddle at 275º for 8-10 minutes per side.

Wheat Thins Crackers

  • 1 1/4 cups whole wheat flour
  • 1 1/2 cups white flour
  • 1/3 cup salad oil
  • 3/4 teaspoon salt
  • v1 cup water
Mix flours; add liquids. Knead as little as possible.
Make a smooth dough and roll as thin as possible onto ungreased cookie sheet (not more than 1/8 inch thick).
Score with a knife to size desired, but do not cut through.
Sprinkle lightly with salt or onion salt as desired.
Bake at 350ºF until crisp and light brown (about 30-35 minutes).
Remove from baking sheet and break into crackers.

Rich, Buttery Crackers

The night before cream in a large bowl:
  • 1 cup of plain whole yogurt
  • 1 cup of butter, softened
Mix in:
  • 3 1/2 cups of freshly ground spelt or wheat flour
  • 2 teaspoons of salt
Cover and leave in a warm place for 12 to 24 hours (this is the “soaking” part).
Preheat oven to 400 degrees.
Dust your surface with a little bit of flour, roll your dough out thin.
Cut into strips and then cut into squares.
